Famous Dave's - Skills for Grills
On the outside chance you're not a professional griller, we've got the inside scoop on becoming one. Here are a few tips from our Head Pitmaster:
- Use an instant-read thermometer to determine your steak's doneness: a 130° center is rare, 140° is medium rare, 150° is medium, 155° is well.
- Add smoky flavor to your grilled meats using hickory wood chips. Soak wood chips in water for 1-2 hours, then place directly onto hot coals. Be sure to keep the lid on while grilling.
Perfect Your Patty
- Fat adds flavor to ground beef – look for an 80/20 blend when purchasing ground beef. For additional flavor, choose ground chuck over ground beef.
- Form your patties approximately ½” thick – if the patties are too thick they will pull together into a ball when cooking.
- By making an indentation in the center of your formed burger patty, you’ll ensure even cooking all the way through.
- Season your burger raw right before putting them on the grill. Experiment with different seasoning blends or salts (like sea salt or smoked salt).
